a different kind of cooking
chicken soup – one of the most wholesome recipes against common colds and states of fatigue - also in china. freely adapted from the chinese proverb: good meat makes a good soup.
as a general rule: the longer the soup boils, the more powerful its warming and nutritional effect.
2 tablespoons of lemon juice
1 pinch of curcuma
1 parsley root
2 bay leaves
ginger root ( about one centimeter )
(optional) vegetable stock cube or powder ( organic / health food store)
fill a pot with 3 liters of cold water, add lemon juice and curcuma, the washed boiling hen, make it boil and let simmer a little. skim the foam if needed. add vegetables.
bring it to a boil and then let everything simmer with the lid on for “five” (!!!) hours.
if you like to eat some of the chicken meat with the soup, is is recommended to cut out the breast meat after one hour. the bones and the rest of the meat can be boiled with the rest of the soup.
after the cooking time, strain the soup through a sieve.
now, it is ready to be served and will last 3-4 days if refrigerated.
